Lunch with #HeinzVinegar: Apple Walnut Salad with Maple Cider Vinaigrette

Apple Walnut Salad

I’ve been a fan of using apple cider vinegar around the house for quite some time…mostly for cleaning, as a hair rinse and as a natural remedy for Daisy, both as a skin soother and added to her kibble for digestive health. Many pet parents also use it as a natural flea deterrent.  Of course, it’s also great in the kitchen especially for sauces, dressings, pickling and more.

Since I work from home, I love making a big salad for lunch with whatever I have in the fridge that day, but especially love this combination of apples, walnuts, avocado and simple dressing I mix up ahead of time in my blender bottle so I always have some ready to go with just a quick shake! Here’s the recipe, if you want to give it a try…

Apple Walnut Salad with Maple Cider Vinaigrette

Salad Ingredients  (serves 2)
  • 4 cups Baby Romaine Lettuce Mix
  • 2 cups Baby Spinach
  • 1 apple cored and cubed (red or green, whatever you have on hand)
  • 1 ripe avocado, cubed or sliced
  • 1/2 cup walnuts, unsalted (toast them for extra flavor)
  • 1/2 cup onion thinly sliced (more or less to taste)

Toss salad ingredients with Maple Cider Vinaigrette

Maple Cider Vinaigrette
  • 1/3 cup Heinz Apple Cider Vinegar
  • 1/2 cup extra virgin olive oil
  • 2-3 tablespoons genuine maple syrup (to desired sweetness)
  • 1 tablespoon stone ground or dijon mustard
  • Coarsley ground sea salt & black pepper, to taste

Shake ingredients in blender bottle or mason jar. Makes enough for several servings; store extra in fridge.

In addition to the more familiar apple cider vinegar, I’ve also been experimenting with Heinz Unfiltered Apple Cider Vinegar. If you’re not familiar with the unfiltered version, it’s vinegar in its most natural and wholesome form. You might have heard it referred to as the vinegar that still has the “mother” — a compound created naturally during vinegar’s fermentation process.
