Bake for Your Dog: Banana Carob Biscotti Recipe {Courtesy of Dog Pack Snacks}

Banana Carob Biscotti Recipe

Ingredients:

  • 1-1/2 cups organic oat Flour (if your dough is too wet add more flour 1/4 cup at a time.)
  • 1-1/2 cups organic quick cook oatmeal
  • 1 ripe banana
  • 1/4 cup peanut butter
  • 1/4 cup milk
  • 1 egg
  • 1/4 cup carob chips (DO NOT USE CHOCOLATE CHIPS)
  • 1 tablespoon baking powder
    Pre-heat oven to 350 degrees.  Mix all the ingredients, except the carob chips, together in a bowl.  Use a stand mixer if you have one. Once a thick dough has formed (somewhere between a cookie dough and a bread dough), add the carob chip and mix in gently.  Use your hands to form the dough into a loaf shape.  HINT: this dough was too fat.  Make your dough flatter and longer.

    Bake on the middle rack on a lined cookie sheet for 20 minutes.  Remove the loaf from the oven and let it stand on the counter for 15 minutes before cutting into 1 inch slices.  HINT: Use a serrated knife.

    After cutting, put the pieces back on the cookie sheet, return to the oven and bake for an additional 15 minutes or until  you have a crispy cookie.  Remove from oven and let cool.  For a seriously crunch worthy snack, turn the oven off and  leave the cookies to dry in the oven for a few hours.  Keep the cookies in a sealed container on the counter for a week.  If you only have one or two pups, or did not make them super crunchy, it is suggested that you refrigerate.

  1. Is the amount of baking powder correct?

    • Hi Jan! I was sent this recipe from Dog Pack Snacks, so I’m not sure about the baking powder, but I did compare it with several other recipes online using the same amount of flour, and 1 tablespoon looks about right. If you make it, let us know how it turned out!
